Gazpacho Shooters

A gazpacho is technically a chilled tomato soup originating from Spain. It is packed with summer vegetables and can be easily adapted to add whatever you have coming up in your garden. I started with tomato juice. In case you make this off season, you can use canned, but you would be quite happy making tomato juice fresh from your juicer!

4 cups tomato juice
1 onion, minced
1 green bell pepper, minced
1 cucumber, chopped
2 cups chopped tomatoes
2 green onions, chopped
1 clove garlic, minced
3 tablespoons fresh lemon juice
2 tablespoons red wine vinegar
1/8 teaspoon dried cayenne
1 teaspoon dried basil
1/4 cup chopped fresh cilantro, parsley or basil
1 teaspoon white sugar
Salt pepper

Blend and chill
I like to serve this in a tall shooter. This is great to bring with in a cooler and pour on the spot at a picnic in the park type music fest, a backyard get together or a classy cocktail party. Your hands stay clean, but it tastes like you just got done digging in the garden. Fresh and bright!
