I’ve never been a big fan of eggs. When I realized I only enjoy them smothered in butter, cheese and salt, it made me wonder why I continue to eat them. After all, you could smother just about anything in butter, cheese and salt and enjoy it.
Considering how I feel about eggs, it’s generally not a huge hardship for me to do without them, but around the Holidays I admit I feel a little left out of the whole eggnog matter. I’m not a proponent of fake either, and if something is called eggnog it probably should have eggs in it, but the thought of drinking raw eggs does not sit well with me. In the end I have to figure it’s the flavor, and let’s be honest, the rum that really count.
So I set out to create an eggless eggnog for those who have a less than loving relationship with eggs, or those who just want to try something new, healthier and egg-free. It’s a lot easier because you’re not simmering and using all sorts of pans, bowls and time. Just throw it all in the blender and voilà! Creamy goodness. Oh, and just for the record, each serving contains only 150 calories and 2.5 grams of fat (compared to normal eggnog which has 343 calories and 19 grams of mostly saturated fat). You can actually indulge in this eggless nog!
Recipe for Two Servings of Easy Eggless Eggnog!
2 cups vanilla almond milk
½ tsp. cinnamon
½ tsp. nutmeg
¼ tsp. vanilla
⅛ tsp. salt (to taste)
½ to 1 cup ice (to taste)
¼ cup rum (optional - I use Sailor Jerry Spiced Rum)
Blend until nice and frothy, sprinkle with cinnamon and nutmeg and serve!
